Guaranteeing Canadian lamb meat quality using near-infrared spectroscopy on intact rack [PDF]
Lamb racks from commercial carcasses were scanned using near-infrared spectroscopy. The prediction accuracies (R 2) for meat quality traits were assessed. Prediction accuracy ranged between 0.40 and 0.94.

Intramuscular fat and sensory properties of pork loin [PDF]
Pork loins (n= 53) were selected from a commercial packing plant to determine the influence of subjective visual marbling score on sensory attributes and quality properties. The loins were obtained from commercial hybrid castrated male pigs originating from different herds fed similar commercial diets.

Effect of the dam’s feeding regimen on the meat quality of light suckling lambs [PDF]
In order to verify the effect of the introduction of concentrates without GMO risk and at low aflatoxin risk in the diet of grazing milk ewes on the quanti-qualitative production of meat of their milk-fed light lambs, two trials were carried out - in ...

Molecular Factors Underlying the Deposition of Intramuscular Fat and Collagen in Skeletal Muscle of Nellore and Angus Cattle. [PDF]
Studies have shown that intramuscular adipogenesis and fibrogenesis may concomitantly occur in skeletal muscle of beef cattle. Thus, we hypothesized that the discrepancy of intramuscular fat content in beef from Nellore and Angus was associated with ...

Background Obesity, defined by BMI ≥30kg/m2, is a risk factor for functional limitations in people with knee osteoarthritis (OA). However, function varies among such individuals. Our objective was to evaluate the implications of obesity subtypes on longitudinal patterns of physical functioning in people with or at risk for knee OA.
