Purification of Para-k-Casein by Gel Electrophoresis
Abstract Para-κ-casein results from the specific action of the enzyme rennin on κ-casein, a principal component of casein. In ure-acontaining starch or polyaerylamide gels at pH 8.6 to 9.2, para-κ-casein migrates from the sample slot to the cathodic electrode.

Influence of k-casein genotype on heat stability and cheese making properties of milk powder
In this study the effect of k-casein gene polymorphism on the technological characteristics of milk powder obtained by spray (AA1:BB1) and freeze drying (AA2:BB2) was investigated.

The action of rennin on casein The disruption of the k-casein complex [PDF]
Approximately 30% of the nitrogen of κ-casein was soluble at pH 4·7 after the protein had been treated with rennin at pH 7 while approximately 10% was soluble in 12% trichloroacetic acid (TCA).

Milk yield and composition in cattle are typical quantitative traitswhich are influenced by environmental factors and allelic variations. K-casein is a protein expressed in milk and, due to is polymorphism, may serve as a molecular marker for yield ...

The average casein micelle size varies widely between milk samples of individual cows. The factors that cause this variation in size are not known but could provide more insight into casein micelle structure and into the physiology of casein micelle ...

K-casein and its Interaction in Human Milk Micelles [PDF]
Human milk K-casein was isolated from the acid-precipitated casein fraction on Sephadex G-200 and Mono Q HPLC. Samples of K-casein purified from different donors were found similar in both amino acid and carbohydrate composition.

In goats, k-casein (CSN3) locus is highly polymorphic with up to 16 allele currently characterized. They produce 13 protein variants (CSN3) that were classified in two groups (AIEF and BIEF), according to their isoelectric point.
