Characterization of thermostable β-amylase isozymes from Lactobacillus fermentum

A strain of Lactobacillus fermentum producing two isozymes of a 20kDa β-amylase was isolated from the faecal sample of a newborn. The starin was identified by sequencing its 16S rRNA gene. The two β-amylase isozymes were resolved and visualized by two dimensional protein gel electrophoresis (2-D gel electrophoresis).

There is much information about glutathione (GSH) in eukaryotic cells, but relatively little is known about GSH in prokaryotes. Without GSH and glutathione redox cycle lactic acid bacteria (LAB) cannot protect themselves against reactive oxygen species. Previously we have shown the presence of GSH in Lactobacillus fermentum ME-3 (DSM14241).

Purification and characterization of acid urease from Lactobacillus fermentum

Acid urease was purified to an electrophoretically homogeneous state, and the molecular weight was estimated to be 220,000. The enzyme consisted of three kinds of subunits, designated alpha, beta and gamma, with molecular weights of 67,000, 16,800 and 8600, respectively, in a (alpha 1 beta 2 gamma 1)2 structure.

Abstract The effects of different metal ions, carbohydrates, heat and enzymatic treatments on the flocculation of yeast cells caused by a flocculant type of Lactobacillus fermentum were investigated. Calcium ion was required at pH 3.0, 4.5 and 6.2 for complete flocculation.
