The Role of Malt on Beer Flavour Stability

open access: yesFermentation, 2023
Delaying flavour staling has been one of the greatest and most significant challenges for brewers. The choice of suitable raw materials, particularly malting barley, is the critical starting point to delay the risk of beer staling. Malting barley and the

Malting Quality of Spring Wheat Varieties [PDF]

open access: yesKvasny Prumysl, 2017
During a three-year testing period (2013 – 2015), totally 99 samples of spring wheat (11 varieties from three testing localities) were analyzed. The basic parameters (extract, relative extract at 45 °C, diastatic power, final attenuation, friability and β-glucan content in wort as well as some special parameters) were tested.

Bacteria and Fungi Synergistically Reprogram Flavonoid Metabolites in the Pericarp of Citrus Reticulata 'Chachi' During Storage

open access: yesAdvanced Science, EarlyView.
The authors employed widely targeted metabolomics, microbial amplicon sequencing, and fermentation assays to investigate the microbiome 's influence on PCRC 's (pericarp of Citrus reticulata ' Chachi ') flavonoid profile over 0–19 years of storage. Based on the correlation analysis, solid‐state and liquid‐state fermentation, and catalytic activity ...

Two Novel S‐methyltransferases Confer Dimethylsulfide Production in Actinomycetota

open access: yesAdvanced Science, EarlyView.
This study identifies two novel S‐adenosine‐methionine‐dependent methyltransferases, MddM1 and MddM2, in actinomycetes from the Mariana Trench. These enzymes can convert toxic hydrogen sulfide (H2S) and methanethiol (MeSH) into dimethylsulfide (DMS), serving as a cellular detoxification and oxidative stress response.

Association Mapping of Malting Quality Quantitative Trait Loci in Winter Barley: Positive Signals from Small Germplasm Arrays

open access: yesThe Plant Genome, 2011
Malting quality comprises one of the most economically relevant set of traits in barley ( L.). It is a complex phenotype, expensive and difficult to measure, that would benefit from a marker-assisted selection strategy. Malting quality is a target of the

Red Blood Cells Internalize Extracellular DNA via Apoptotic Bodies with Clinical Relevance to Cancer Patients

open access: yesAdvanced Science, EarlyView.
Mature red blood cells (RBCs) can capture extracellular DNA, with short fragments homologous to cfDNA. This uptake is mediated by apoptotic bodies, which induce RBC oxidative stress, deformation, and accelerated in vivo clearance. The rbcDNA abundance correlates with tumor burden and therapeutic response, highlighting its potential as a liquid biopsy ...
