Production and optimisation of microbial lipase

Industrial enzymes can be extracted from a naturally occurring source by production from a microorganism in fermentation. Lipases (3.1.1.3) belong to the class of serine hydrolases that break down triglycerides to fatty acids and glycerol. The fungus Aspergillus niger has been known to produce triacylglyccerol lipase.
