Preparation of Low-Lactose Milk Powder by Coupling Membrane Technology

open access: yesACS Omega, 2020
Due to lactose intolerance, there is a growing need for lactose-free or low-lactose dairy products. Herein, a combination of three membrane technologies (UF, electrodialysis (ED), and nanofiltration (NF)) was used as a novel green technology to replace ...

Differentiation and characterization of volatile compounds in five common milk powders using HS-GC-IMS, HS-SPME-GC–MS, and multivariate statistical approaches

open access: yesFood Chemistry: X
Aroma is a key factor in milk powder quality evaluation and consumer choice. However, research has mostly focused on processing effects, with little on flavor differences among milk powders.

Microenvironmental Reprogramming by 3D Anisotropic Cardiac Extracellular Matrix Induces Nuclear Remodeling and Epigenetic Maturation of Chemically Induced Cardiomyocytes

open access: yesAdvanced Functional Materials, EarlyView.
A 3D anisotropic hydrogel derived from heart extracellular matrix guides cytoskeletal alignment and nuclear remodeling in reprogrammed cardiomyocyte‐like cells. This study reveals how matrix alignment modulates nuclear envelope dynamics and chromatin state, triggering transcriptional and functional maturation.

Unraveling MXene Oxidation Mechanisms Under Realistic Gas Environments by In Situ Gas‐Cell TEM

open access: yesAdvanced Functional Materials, EarlyView.
Real‐time visualization of MXene degradation reveals a fundamental oxidation mechanism under oxygen and moisture environments. Using in situ gas‐cell electron microscopy, this study demonstrates that oxygen degradation drives a thermodynamically controlled high‐temperature transformation into mixed rutile/anatase phases.

Tracking the Dairy Microbiota from Farm Bulk Tank to Skimmed Milk Powder

open access: yesmSystems, 2020
Microorganisms can enter and persist in dairy at several stages of the processing chain. Detection of microorganisms within dairy food processing is currently a time-consuming and often inaccurate process.

Physical and functional properties of whole milk powders prepared from concentrate partially acidified with CO2 at two temperatures

open access: yes, 2016
Effects of carbonation of whole milk concentrate on spray dried powder properties were investigated. Concentrate acidification by CO addition (2000 ppm) was found to strongly modify the functional properties (solubility, dispersibility) and structural ...
