Identification and functional analysis of class 3 lipases associated with triacylglycerol metabolism in Nannochloropsis oceanica (Eustigmatophyceae)

open access: yesJournal of Phycology, EarlyView.
Abstract Microalgae accumulate triacylglycerols (TAGs) as storage lipids in response to nutrient limitation, yet the mechanisms governing TAG turnover remain incompletely understood. In the oleaginous microalga Nannochloropsis oceanica, functional studies of TAG degradation have focused on lipases containing patatin domains, whereas the roles of other ...

Structure Formation in Dairy Cheese and Plant‐Based Cheese Analogues: A Review

open access: yesSustainable Food Proteins, Volume 4, Issue 3, September 2026.
In this review, structure formation in dairy cheese and plant‐based cheese analogues is analyzed following a multi‐length scale perspective. Particular emphasis is placed on the distinction between bottom‐up assembly, characteristic of natural dairy cheese, and top‐down structuring, typical of processed cheese and cheese analogues.

Gas-liquid chromatography of silylated mixtures from lipolysis of triglycerides containing unusual fatty acyl groups

open access: yesJournal of Lipid Research, 1966
A convenient and rapid procedure involving methylation, silylation, and temperature-programmed gas-liquid chromatography (GLC) is described for analyzing unfractionated products from the hydrolysis of triglycerides with pancreatic lipase.

Designing nutritionally improved waffles containing glycerol monostearate based oleogel and aquafaba

open access: yesJournal of the Science of Food and Agriculture, Volume 106, Issue 11, Page 6779-6788, 30 August 2026.
Abstract BACKGROUND Plant‐based diets are considered healthier and more sustainable, while solutions are sought to replace saturated fats in foods products. Aquafaba (AF) from chickpea cans was foamed to formulate waffles. AF was concentrated at three dry matter contents.

Essential Oil Oleogels—Part II: Oleogels Containing Vanilla (Vanilla planifolia) Essential Oil

open access: yesEuropean Journal of Lipid Science and Technology, Volume 128, Issue 8, August 2026.
Vanilla essential oil‐containing oleogels reduced oil leakage while forming a weak gel‐like structure that partially stabilized liquid oils. The oleogels exhibited a soft, cohesive network suitable for semisolid food applications such as spreads and fillings.

Improved quantitation of plasma lipids by direct gas-liquid chromatography

open access: yesJournal of Lipid Research, 1969
A preliminary digestion of total plasma lipid extracts with phospholipase C, which converts the lysolecithins, lecithins, and sphingomyelins into monoglycerides, diglycerides, and ceramides, respectively, has been shown to facilitate subsequent ...
