Water‐Holding Capacity Regulation of Dietary Fibers in Soybean Residue: From Modification Strategies, to Function Improvement and Food Texture Optimization

open access: yesFood Frontiers, Volume 7, Issue 2, March 2026.
Soybean residue exhibits poor water holding capacity (WHC) due to high insoluble dietary fiber (>95%). Modification strategies (physical, biological, and chemical) enhance WHC by altering fiber structure/function, enabling optimized food texture and functional food development in meat, bakery, dairy, and other food systems.

Modulation of in Vitro Digestibility and Bioaccessibility in Aging‐Related Gastrointestinal Models: Effects of Pork Processing Methods

open access: yesFood Frontiers, Volume 7, Issue 2, March 2026.
Simulated elderly digestion showed markedly lower efficiency than adults. SV processing enhanced peptide release and bioaccessibility, and counteracted the reduced digestive efficiency of the EA model. ABSTRACT This study investigated how gastrointestinal (GI) changes in elderly achlorhydria individuals (EA) affect protein digestibility and peptide ...

Designing Protein Gels for Nutrient Delivery: From Formulation to Digestion

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 25, Issue 2, March 2026.
ABSTRACT Protein gels have diverse applications in food industry, with plant proteins as potential alternatives to animal‐derived products. The applications of protein gels mainly depend on gel properties while gel digestibility affects the delivery and release of nutrients. However, the relationship and synergistic influences among gelation mechanism,

Glycative Stress Disrupts the Mitochondrial‐Lysosome Axis and Promotes Geroconversion in Aging Cardiomyocytes

open access: yesAging Cell, Volume 25, Issue 3, March 2026.
Cardiac aging promotes mitochondrial AGE accumulation driven by defective glycative stress detoxification. AGE‐modified mitochondria disrupt lysosomal proteolysis, impairing mitophagy and promoting lipofuscin buildup. This mechanism sustains chronic unresolved mitochondrial damage, driving proinflammatory senescence in cardiomyocytes and defining a ...

Establishment of a mouse model for ischaemic heart failure induced by coronary microembolization via left ventricular oil injection

open access: yesExperimental Physiology, Volume 111, Issue 3, Page 1039-1057, 1 March 2026.
Abstract Over the past three decades, there has been a steady increase in clinical attention to ischaemic heart failure caused by coronary microembolization. Nonetheless, a suitable mouse model for studying this condition remains limited. In the present study, we developed a mouse model of coronary microembolization‐induced ischaemic heart failure by ...
