TSF and Rg3 demonstrate significant cardioprotective effects against DOX‐induced cardiotoxicity (DIC) by mitigating oxidative stress, inflammation, and apoptosis while preserving mitochondrial function. Solubility and structure of fish myofibrillar proteins as affected by processing parameters
