Assessment of milk pasteurisation in artisanal cheeses using colorimetric analysis: A novel approach

CIELAB b* was applied as a novel quantitative parameter to assess alkaline phosphatase. ALP activity in raw milk cheeses declined during maturation. Aqueous extraction distinguished raw and pasteurised cheeses, showing practical value. The method lowers analytical costs and provides a practical tool for food safety inspection.

Natamycin as a Fungicide in Agar Media [PDF]

Fungal inhibition in four commonly used agar media was improved by substituting natamycin (pimaricin) for cycloheximide. The recovery of bacteria was not affected by natamycin, whereas fungal contamination from a variety of samples was significantly suppressed. Furthermore, natamycin lacks the occupational health hazards of cycloheximide.

This study demonstrated that SACE_Lrp binds to the ilvE promoter in a BCAA‐dependent manner, and BCAAs addition results in a higher increase of ilvE transcription and erythromycin production in mutant ΔSACE_Lrp than in the original strain S. erythraea A226.
