Determination of the Intrinsic Viscosity of Native Potato Starch Solutions
Starch - Stärke, 1995AbstractThe influence of shear rate and concentration on the viscosity of solutions of native potato starch in water was investigated. The concentration dependence of viscosity was expressed by the Huggins equation with shear rate independent intrinsic viscosity.

Core Collections of Potato (Solanum) Species Native to the USA
American Journal of Potato Research, 2016Potato has two wild relatives native to the USA, Solanum jamesii (jam) and S. fendleri (fen). Core collections are a useful tool for genebanks, identifying a ranked minimum number of samples that together encompass most of the total genetic diversity. With diversity measured as presence of AFLP bands, we made core collections for each species such that

Comparison of rheological properties of native and pregelatinized potato starches
Food Science and Biotechnology, 2014Rheological properties of native potato starch (NPS) and pregelatinized potato starch (PPS) were investigated under steady and dynamic shear conditions at 20°C and 60°C. The consistency index, apparent viscosity, and yield stress values of PPS were much lower than those of NPS. The flow behavior of PPS is more temperaturedependent.

Shear Stress Relaxation of Native and Modified Potato Starch Gels
Starch - Stärke, 1986AbstractShear stress relaxation measurements were used to characterize native potato starch gels, and modified gels, such as starch acetate, distarch phosphate, dihydroxypropyl distarch phosphate and lipid coated starch. It was found that cross‐linking and lipid coating greatly increased the stiffness of the gels, which was observed as increased ...

Traditional uses, processes, and markets of native potatoes (Solanum spp.)
The Solanaceae botanical family is known for its contribution to food security through the cultivation of various crops, including potatoes and tomatoes. These crops, primarily Solanum tuberosum and Lycopersicum esculentum, originated in Andean America and are now grown worldwide.Condori, Bruno +4 more

The Regional Biogeography of Native Potato Cultivars in Highland Peru
Journal of Biogeography, 1991This paper examines the biogeography of cultivars belonging to the domesticated potatoes S. stenotomum Juz. et Buk., S. goniocalyx Juz. et Buk., S. x chaucha Juz. et Buk., and S. tuberosum subsp. andigena Juz. et Buk. It describes the spatial patterning of cultivars in a highland region of Southern Peru and evaluates physicalenvironmental (climate ...
