香気成分として重要な含窒素環状化合物の浜納豆における種類及び含量を測定した。ジクロロメタンによる直接溶媒抽出法により塩基性抽出画分を調製し, FTD装備のGC及びGC-MS分析により同定定量した。11種類のピラジン, ピリジン, N-メチルピロリドン, ベンゾチアゾール, 2-アセチルピロールが検出された。ピラジン化合物の総含量は629 ppbであった。閾値との比較より, ピラジン化合物が浜納豆の香気に寄与している可能性があることが示唆された。
