Phenolic profile of selected grape (Vitis vinifera L.) varieties in the course of ripening and Botrytis cinerea infections

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract BACKGROUND Grapevine phenolic compounds play key roles in plant defense and wine quality. Composition depends on factors such as maturity and infections such as grey mold caused by Botrytis cinerea. Grapevines respond to infections by actively modifying their phenolic profile.

Bee pollen as functional food and environmental bioindicator: current evidence and future challenges

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract Bee pollen (BP), a plant‐derived product collected by honey bees, is increasingly promoted as a functional food due to its content of proteins, essential amino acids, lipids, vitamins, minerals, and bioactive compounds such as polyphenols and flavonoids.

Evolution of free amino acids and volatile compounds in dry‐cured fermented 'salchichón' sausages superficially inoculated with different molds

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract BACKGROUND Surface molds contribute to flavor development in dry‐cured fermented sausages through their effects on proteolysis, amino acid catabolism, and volatile compound formation. This study evaluated the influence of Aspergillus oryzae, Penicillium camemberti, Penicillium roqueforti and Penicillium nalgiovense on the evolution of free ...

Portuguese quality wine and the region-of-origin effect: consumers' and retailers' perceptions [PDF]

open access: yes
This study investigates the relative importance of region of origin associated with extrinsic (price, brand, promotion) and intrinsic (grape, type of wine, colour, age, special references) cues in the decisions of final consumers and small retailers to ...

Characterizing vineyard‐specific differences in Pinot Noir grape composition in relation to soil properties and rhizosphere microbial communities

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract BACKGROUND Grape berry chemical composition is closely linked to wine quality and provides important information for vineyard management. However, the relationships between berry composition, vineyard soil conditions and rhizosphere microbial communities remain insufficiently understood.

Kinetic Study on the Reactions of Hydroxyl Radical with 1‐butene, Isobutene, and Trimethylpentene: Temperature and Pressure Dependence

open access: yesInternational Journal of Chemical Kinetics, EarlyView.
ABSTRACT The temperature dependence of the reaction rate coefficients (k) for the reactions of hydroxyl radical with three alkenes was measured by using laser‐induced fluorescence techniques in the temperature range of 298–750 K. The negative temperature dependence of k was observed for each reaction in the low‐pressure range.
