The Hardness of Glutinous Rice Cake, Gelatinization and Urea Disintegration in Waxy Rice
加工形態に対応した糯品種を育成するための育成段階での選抜技術を確立するために, 現在栽培している品種, 育成品種について, 餅製品の加工上重要な指標とされる餅硬化性, ラピッド・ビスコ・アナライザー(RVA)による糊化特性, 尿素崩壊性について検討した. 餅硬化性には品種間差が認められ, こがねもちは餅硬化性が高かった. また, 品種と年次間に交互作用が認められた. 育成系統について餅硬化性試験を行ったところ, ヒメノモチより著しく餅硬化性が劣る系統, あるいはこがねもちより明らかに優る系統は認められなかった. 餅硬化性は, RVA特性値中の糊化温度, ピーク温度, 最低粘度, 最終粘度およびコンシステンシーと正の相関関係にあり, ブレークダウンと負の相関関係にあった. また, 餅硬化性, 糊化温度,

Evaluation of Processing Properties for Rice-cake in Induced Waxy Mutants of Rice
O. sativa(品種:農林8号,レイメイ,ニホンマサリ),およびO. glaberrimaから人為的に誘発された糯突然変異系統の餅加工特性を評価した.また,これらを異なる登熟温度条件で栽培することにより,登熟温度に対する加工特性の反応を調査した.その結果, O. glaberrimaの糯突然変異系統は,「こがねもち」以上の極めて高い餅硬化性と糊化開始温度を示し, O. sativaの糯突然変異系統は実用品種に比べ低い特性を示した.「ニホンマサリ」由来の突然変異系統では,登熟温度の上昇にともなって,餅硬化性が低下するものが認められた.「レイメイ」由来の突然変異系統においては,餅硬化性が低いにも関わらず澱粉の粘度特性は高いという特性を見出した.原品種を同じくする突然変異系統群内では ...
