Food Chemistry, 2021The present study investigated phospholipid content, fatty acid composition and the positional distribution (sn-1,3 and sn-2) of n-3 fatty acids in four blue mackerel processing by-products (head, skin, roe, and male gonad). Total lipid was extracted using hexane/ethanol (1:2) and the analyses were carried out using NMR and GC-FID techniques.
