En Ecuador se producen tres variedades de ovo, Spondias mombin L, Spondias cytherea L. en la Costa y Spondias purpurea L. que se produce en la localidad de Ambuquí y se consume tanto como si está o no maduro. Se evaluaron las características físico‐químicas del ovo de Ambuquí.
