TEXTURE PROFILE ANALYSIS APPLIED TO POUNDED YAM

open access: yesJournal of Texture Studies, 2007
ABSTRACT Textural quality of pounded yam made from tubers of Dioscorea rotundata Poir. and Dioscorea alata L. that were freshly harvested or stored for 4 months were evaluated using texture profile analysis. Significant correlations were obtained between the values for texture attributes evaluated using sensory texture profile analysis and those from ...

Microstructure, texture profile and descriptive analysis of texture for traditional and light mortadella

Food Structure, 2015
Abstract The diet is an important modifiable factor that influences the development of chronic diseases. There is a lot of evidence demonstrating the importance of diet modifications on consumer health. However, the consumers demand low fat products without any loss of their texture quality.

The instrumental texture profile analysis revisited

Journal of Texture Studies, 2019
AbstractAlthough innovative at the time of their inception, all the historic and extant instrumental texture profile analysis (TPA) versions have serious methodological flaws. Their measured and calculated parameters, for example, “hardness,” “brittleness,” and “cohesiveness,” bear only a remote relationship to the same properties as understood in ...

Measurement of Instrumental Texture Profile Analysis (TPA) of Foods

2021
Texture is one of the sensory attributes that consumers use to evaluate food acceptability and purchasing decision. It is a very complex attribute where different senses (e.g., vision, hearing, and touch) are used simultaneously to assess different textural properties, such as hardness, cohesiveness, adhesiveness, gumminess, and springiness.

INSTRUMENTAL TEXTURE PROFILE ANALYSIS WITH PARTICULAR REFERENCE TO GELLED SYSTEMS

Journal of Texture Studies, 1996
ABSTRACTInstrumental Texture Profile Analysis (TPA) was developed about 30 years ago, constituting an interesting way of analyzing a series of textural parameters in only one test. Since then much work has been done and new tools have been developed.

APPLICATION OF TEXTURE PROFILE ANALYSIS TO INSTRUMENTAL FOOD TEXTURE EVALUATION*

Journal of Texture Studies, 1975
AbstractAlthough the Texturometer was used in establishing the GF objective Texture Profile Analysis (TPA) of foods, it has been largely supplanted by the Instron. The Instron GF TPA parameters have been determined for the most part by the original Texturometer procedures. Some workers have chosen to measure only one or several of the GF TPA parameters;

A Procedural Description of Geometric Textures by Spectral and Spatial Analysis of Profiles

Computer Graphics Forum, 1997
In this paper we describe a method for automatically generating procedural “geometric” textures, using a hybrid (spectral and spatial) analysis of profiles (ID curves). The profile describes a certain height variation for a certain abscissa. We call “geometric” textures a class of textures including “Bump” textures and “hypertextures”.

Evaluation of in vitro mucoadhesiveness and texture profile analysis of doxycycline in situ hydrogels

Die Pharmazie, 2020
Delivery of active ingredients to the oral mucosa from topically applied formulations reduces side effects from systemic administration and enhances the treatment efficiency. The challenge however, is to maintain the formulation at the administration site due to rapid salivary flow and mechanical movements of the mouth.

The analysis of profile strata for surface texture specification

Applications of Surface Science, 1983
Abstract Surface are created by a series of one or more processes and each process in the series leaves its signature on the surface. For many common manufacturing processes the height distribution of a surface profile is known to be essentially Gaussian, and if such a distribution is plotted on normal probability coordinates the resulting curve ...
