Toxicological Evaluation of Acetolactate Decarboxylase

The enzyme acetolactate decarboxylase (ALDC), which is used in the fermentation of beer, is produced by Bacillus subtilis containing the structural gene for ALDC production originating from a Bacillus brevis .
