O umbu (Spondias tuberosa Arruda Câmara) é uma fruta nativa do semiárido nordestino, com grande importância econômica na região. Sua polpa é utilizada para a produção de doces, geleias e outros produtos. Este estudo teve como objetivo desenvolver um doce tipo brigadeiro a partir da polpa do umbu.
