Antioxidant efficacy of thymol and carvacrol in microencapsulated walnut oil triacylglycerols
Food Chemistry, 2019Antioxidant efficiency of thymol and carvacrol in walnut oil triacylglycerols (WO-TAGs) was investigated. WO-TAGs alone or fortified with thymol/carvacrol were emulsified with sodium caseinate-lactose mixture. Oxidative stability of freeze dried emulsions was assessed via Rancimat and accelerated oven tests.

Walnut oil as a dietary intervention for atherosclerosis: Efficacy and mechanistic pathways
Biochimica et Biophysica Acta (BBA) - Molecular and Cell Biology of LipidsWalnut oil (WO) and peanut oil (PO) are common vegetable oils rich in unsaturated fatty acids, known to alleviate atherosclerosis (AS) and reduce the risk of cardiovascular diseases (CVD). WO contains a higher proportion of polyunsaturated fatty acids (PUFAs) compared to PO.

PHYSICOCHEMICAL PARAMETERS OF BASIL AND WALNUT OILS AND THEIR MIXTURES
Some physicochemical parameters (density and surface tension) of three basil and two walnut oils of different origin were determined at six different temperatures (6, 20, 25, 30, 35 and 40℃). Mixtures of vegetablee and essential oils (concentration 0.1 and 0.2%) were prepared, and the same physicochemical parameters were determined.Koleva, Y. +7 more
