清酒もろみで地蓋をつくる酵母は米粒細胞膜とよく凝集するが, これらの酵母の醗酵能ともろみでの醗酵力との関係およびこれらの酵母でもろみが汚染された場合にうける影響につき検討した。1地蓋形成酵母 (A-63, S-23など) と非形成酵母 (協会6号, 7号など) の醗酵能および麹汁での醗酵性では両者に差は認められないが, もろみでの醗酵では地蓋形成酵母の方が悪い。2.もろみでの酵母数は, 地蓋形成酵母のA-63, S-60によるもろみで, それぞれ0.4×108/ml, 0.7×108/mlと非形成酵母の場合よりかなり低い値を示した。3.協会7号によるもろみにその酵母数と同数の地蓋形成酵母 (A-62) を添加した後, 平面培養法により両者を分別検出すると, 7号の純度が90 ...
