Food Science &Nutrition, Volume 13, Issue 6, June 2025.Heating garlic homogenate and baking or steaming garlic cloves caused no or moderate decrease in the total antioxidant capacity but decreased the alliinase activity, thiosulfinate content, and the antiproliferative activity (TAC) of garlic for ovarian cancer cells and fibroblasts.
