Pulsed Electric Field Processing Enhances the Endothelial Bioefficacy of Red Beet (Beta vulgaris L.) Extracts by Restoring Endothelial Nitric Oxide Synthase–Nitric Oxide Signaling in High‐Fat Diet Rats

open access: yeseFood, Volume 7, Issue 4, August 2026.
Pulsed electric field (PEF) processing qualitatively reshapes the phytochemical profile of red beet extracts, resulting in enhanced endothelial bioefficacy. Compared with conventional extraction, PEF‐treated extracts more effectively restore nitric oxide signaling, suppress endothelial inflammation, and normalize vascular structure in high‐fat diet ...

The evolution of betalain biosynthesis in Caryophyllales [PDF]

open access: yesNew Phytologist, 2019
SummaryWithin the angiosperm order Caryophyllales, an unusual class of pigments known as betalains can replace the otherwise ubiquitous anthocyanins. In contrast to the phenylalanine‐derived anthocyanins, betalains are tyrosine‐derived pigments which contain the chromophore betalamic acid. The origin of betalain pigments within Caryophyllales and their

Betalains: A Narrative Review on Pharmacological Mechanisms Supporting the Nutraceutical Potential Towards Health Benefits

open access: yesFoods
Betalains are naturally occurring pigments sourced mainly from Beta vulgaris (beetroot), Hylocereus spp. (dragon fruit), Amaranthus spp., and Opuntia spp. Betalains are widely used for their vibrant colors and health-promoting properties.

Non‐Enzymatic Browning Under Emerging Cooking Technologies: Matrix‐Dependent Pathways, Neoformed Compounds, and Nutritional–Toxicological Trade‐Offs

open access: yeseFood, Volume 7, Issue 4, August 2026.
Non‐enzymatic browning in foods is a dynamic reaction network integrating Maillard chemistry, caramelization, lipid oxidation, and ascorbic acid degradation. Processing technologies and matrix factors govern pathways, balancing desirable sensory attributes with harmful compounds.

Effects of Different Pretreatments With Vacuum Drying on Drying Kinetics, Bioactive Properties and Physicochemical Characterization of Red Beetroot Snacks

open access: yesFood Science &Nutrition, Volume 14, Issue 8, August 2026.
Different pretreatments significantly affected the drying kinetics and quality attributes of vacuum‐dried red beetroot snacks. Microwave pretreatment markedly shortened the drying time and enhanced effective moisture diffusivity, while ultrasound pretreatment preserved the highest betalain content.

Rationale on the High Radical Scavenging Capacity of Betalains

open access: yesAntioxidants, 2019
Betalains are water-soluble natural pigments of increasing importance as antioxidants for pharmaceutical use. Although non-phenolic betalains have lower capacity to scavenge radicals compared to their phenolic analogues, both classes perform well as ...

Effect of gamma irradiation and storage days on physicochemical, sensory, and microbial quality of pineapple (Ananas comosus) fresh cut under refrigeration

open access: yesJSFA reports, Volume 6, Issue 8, Page 292-300, August 2026.
Abstract Background Fresh‐cut pineapple is increasingly consumed for its convenience and nutritional value; however, minimal processing accelerates quality deterioration and microbial growth, resulting in substantial postharvest losses. Gamma irradiation is recognized as a nonthermal preservation technique, but limited information exists regarding its ...

Guapira leucophylla (Nyctaginaceae, Caryophyllales), a new species from the northern Espinhaço Range of Minas Gerais, Brazil

open access: yesNordic Journal of Botany, Volume 2026, Issue 8, August 2026.
Guapira Aubl. (Nyctaginaceae, Pisonieae) comprises dioecious shrubs and trees widely distributed in the Neotropics and occupying diverse habitats. In the Brazilian Cerrado, the genus occurs in several phytophysiognomies, including Campos Rupestres, a montane rock ecosystem with high levels of endemism but still marked by significant gaps in botanical ...

Continuous Flow UV-C Irradiation Effects on the Physicochemical Properties of Aloe vera Gel and Pitaya (Stenocereus spp.) Blend

open access: yesFoods, 2020
Physicochemical properties of a blend of 10% Aloe vera gel with 5% pitaya juice subjected to UV-C doses of 16.5, 27.7, and 40 mJ/cm2 were evaluated at pH 3.5 and 5.5. Unprocessed treatments were used as the control.
