Genotypic diversity of the Asiatic black truffle, Tuber himalayense, collected in spontaneous and highly productive truffle grounds

Mycological Progress, 2020
Tuber himalayense is a species of edible Asiatic black truffle which is sister to Tuber indicum. Local populations contribute significantly to the reproduction of truffles, but fundamental data of fine-scale genetic structure is lacking in Asiatic truffle species.

Dimethyl sulphide: the secret for black truffle hunting by animals?

Mycological Research, 1990
The capacity of animals to detect underground black truffles ( Tuber melanosporum ) was studied by burying samples of 5α-androstenol, reported as a truffle pheromone, of Nature — Identical Black Truffle flavouring, and of solutions of the different volatile components previously identified in black truffles.

White truffles, like black ones, are tyrosinase positive

Plant Science, 1996
Abstract White truffles, Tuber magnatum Pico and Tuber excavatum Vitt. are both albino tyrosinase positive fungi. Interestingly, while both l -tyrosine-3-monooxygenase and l -3,4-dihydroxyphenylalanine oxidase activities of T. excavatum Vitt. decrease versus time after decompartmentalization, those of T. magnatum Pico increase.

Climatic variations explain annual fluctuations in French Périgord black truffle wholesale markets but do not explain the decrease in black truffle production over the last 48 years

Mycorrhiza, 2014
Production of the black truffle (Tuber melanosporum Vittad.) has experienced a decline in France over the last century. Different sociological factors as well as climate change have been suggested as possible explanations for this decline. The aims of this study were to assess the effects of annual climatic variations on black truffle sales by ...

Evaluation of Gamma and Electron-Beam Irradiation on the Aromatic Profile of Black Truffles (Tuber melanosporum) and Summer Truffles (Tuber aestivum)

Innovative Food Science & Emerging Technologies, 2012
Abstract Changes in the aroma composition of truffles (Tuber aestivum and Tuber melanosporum) after electron-beam and gamma irradiation at doses of 1.5 kGy and 2.5 kGy were investigated by solid phase microextraction methodology (HS-SPME). In particular, the effect was evaluated on specific compounds chosen for their aromatic importance according to ...

Distinguishing the Périgord black truffle from the winter truffle and other look-alikes in the laboratory and field

2008
If countries in the Southern Hemisphere are to become serious exporters of Périgord black truffle for Northern Hemisphere, out-of-season markets they will need to be able to produce a consistent supply of good quality truffles. This will require a well established method of ensuring the quality of the truffle and the development of large areas of ...
