Some Observations on the Yellowing Phenomenon in Cooked Hams
工場で発生した黄変ハム断面の黄色部は,366nmの紫外光下で強い蛍光を発した.pH,水分,タンパク質含量,細菌数の分析結果では,黄変ハム黄変部と正常部,正常なハム,ならびに市販同等品の間に差は認められなかった.ヘム色素の分析においても,全ヘム色素含量,ニトロソヘム色素の吸収スペクトル共に異常はなく,ヘム色素は通常の発色状態を呈していた.黄変ハム発生との関連をいわれて来た種々の原因,すなわち塩せき肉の緑変,オーバー•アンダーキュアリング,PSE肉,ピックルの注入過剰などを検討した結果,実験の範囲内では関与を認めなかった.タンパク材として,pHを7.3に調整したホエータンパク粉(記号:WA),pH6.9のホエータンバク粉,WPI,ナトリウムカゼイン,大豆タンパク,卵白,糖質としてコーンシラップソリッド ...

Outbreak of listerosis due to imported cooked ham, Switzerland 2011 [PDF]
From 24 April to 31 July 2011, nine cases of listeriosis were registered in the cantons of Aargau, Basel-Land and Zurich, Switzerland. In six of the cases, infection with Listeria monocytogenes was laboratory confirmed, while three remained suspected cases.
