Effect of temperature and agitation on the enzymatic synthesis of oligosaccharides and dextran in orange juice

open access: yesFood Chemistry Advances, 2023
The production of prebiotic fruit juices has been extensively investigated, mainly by the enzymatic route. However, studies involving agitated reactors and other important parameters are lacking.

Transglycosylation of gallic acid by using Leuconostoc glucansucrase and its characterization as a functional cosmetic agent

open access: yesAMB Express, 2017
Gallic acid glycoside was enzymatically synthesized by using dextransucrase and sucrose from gallic acid. After purification by butanol partitioning and preparative HPLC, gallic acid glucoside was detected at m/z 355 (C13, H16, O10, Na)+ by matrix ...

Expanding the Enzymatic Polymerization Landscape by Lipid Mesophase Soft Nanoconfinement

open access: yesAngewandte Chemie, Volume 136, Issue 1, January 2, 2024.
The enzymatic synthesis of dextran in lipidic mesophase catalyzed by the enzyme dextransucrase DSR‐M not only yields polymers at 30 °C that are six times longer than in bulk solution at identical concentrations of reactants, but also allows the reaction to be carried out in subzero liquid water at temperatures as low as −20 °C.

Sucrose-Induced Proteomic Response and Carbohydrate Utilization of Lactobacillus sakei TMW 1.411 During Dextran Formation

open access: yesFrontiers in Microbiology, 2018
Lactobacillus (L.) sakei belongs to the dominating lactic acid bacteria in indigenous meat fermentations, while diverse strains of this species have also been isolated from plant fermentations. We could recently show, that L.

Genomic Characterisation of Limosilactobacillus fermentum CRL2085 Unveiling Probiotic Traits for Application in Cattle Feed

open access: yesEnvironmental Microbiology Reports, Volume 17, Issue 5, October 2025.
A comprehensive genomic and phenotypic analysis of Limosilactobacillus fermentum CRL2085 revealed key probiotic and nutritional traits supporting its safe application in cattle feed. The strain harbors genes for stress tolerance, adhesion, exopolysaccharide production, and B‐vitamin biosynthesis, and efficiently metabolizes plant‐derived carbohydrates,

Functional role and folding properties of the glucan‐binding domain of oral bacterial glucansucrase

open access: yesFEBS Letters, Volume 599, Issue 16, Page 2388-2402, August 2025.
The role of the glucan‐binding domain in Streptococcus sobrinus glucansucrase was examined, focusing on its impact on enzymatic activity, dextran binding, and structural stability of deletion mutants and a circularly permuted protein. Our research revealed that glucosyl transfer efficiency is linked to cooperative interdomain folding.
