Chemical Composition, Amino Acids, Phenolic Profiles and Bioavailability of Minerals in Livingstone Potato (Plectranthus esculentus) as Affected by Different Processing Techniques

Boiling retained the nutrients and polyphenol compounds in Plectranthus esculentus tubers better than frying or roasting. A bioavailability study showed that the phytates and oxalates in the tuber may not affect the bioavailabilities of calcium, zinc, or iron in Plectranthus esculentus tubers when eaten.

These compounds contribute to antioxidant, anti‐inflammatory, antimicrobial, prebiotic, and cardioprotective benefits.

Nitrogen Balance and Protein Quality Ingestion in Pregnant Women: Characterizing a Nutritional Scenario in a Pilot Study in Mexico

We assessed dietary intake and protein adequacy among pregnant women using the duplicate portion method and urinary nitrogen excretion. Nitrogen balance was used to evaluate protein status, showing that poorer diet quality and higher BMI were associated with negative nitrogen balance, while better diet quality was linked to positive balance.
