Brief review of publications devoted to FRAP assay shows it as the tool for determination of total antioxidant capacity of foodstuffs and other objects. The effect of various factors on analytical signal has been investigated and optimized. Results of model mixtures analysis differ from total content of antioxidants (polyphenols).
