Gel Consistency of New Characteristic Rice Cultivars.
簡易な米品質評価手法であるアルカリ崩壊度,ゲルコンシステンシーの2つの試験方法を新形質米に適用した.(1) 粳米のアルカリ崩壊度は北海系統と「ホシユタカ」が大きく,北陸系統と「ササニシキ」が小さかった.糯米は粳米より崩壊度が小さかった.(2) ゲルコンシステンシーの試験条件は「水酸化カリウム濃度0.2N,試料米粉量100mg(乾物換算)」が適当であった.(3) アルカリ崩壊度)ゲルコンシステンシーとアミログラム特性値との間に高い相関が認められ,新形質米の簡易な品質評価手法と考えられる.(4) 通常のジャポニカ種の評価のためには上記の試験条件では不充分であり,別途条件を検討する必要がある.

Development of Plastic Consistency in Air-Dispersed Gel.
The creep and recovery behaviors of the agar gel with the porosity below 20% were expressed by a four-element model consisting of 2 springs and 2 dashpots. Experimental values of recovery part fitted well to the predicted curve. The non-recoverable instantaneous deformation and the non-recoverable retarded deformation were not included in the behavior.
