サツマイモデンプンを用いて,水分含量,温度,時間を変えていわゆる湿熱処理を行い,処理デンプンの性質をVI粘度計による粘度図と温度図,およびX線回折計による回折図から調べ,次のような事実を明らかにした. (1) 処理時のデンプンの水分含量を一定にすると,処理デンプンの性質の変化は処理温度が高いほど,また時間が長いほどよく進む.
