Lipidomic analysis and classification of Iberian dry‐cured hams with low field NMR
The fatty acid profile profile of Iberian hams was readily determined by benchtop 1H‐NMR spectroscopy. Hams were classified according to the pigs' diet by using sPLS‐DA multivariate analysis.
