Fermentirani mliječni napici u koje se ubraja i kefir, namirnice su visoke prehrambene i biološke vrijednosti. Kulture za proizvodnju kefira dobivaju se fermentacijom mlijeka pomoću kefirnih zrnaca. Mikroflora kefirnih zrnaca je vrlo složena i promjenjivog sastava, a sadržava više vrsta bakterija i kvasaca.
