Microencapsulation of esterified krill oil, using complex coacervation

Journal of Microencapsulation, 2017
The microencapsulation of the esterified krill oil (EKO), obtained from the transesterification of krill oil (KO) with 3,4-dihydroxyphenylacetic acid (DHPA), via complex coacervation and was investigated. The experimental findings showed that the DHPA and phenolic lipids (PLs) in the EKO affected the stability of the gelatine (GE)-EKO emulsion.

The complex coacervation of gum Arabic and krill protein isolate and their application for Antarctic krill oil encapsulation

Carbohydrate Polymers
Antarctic krill oil (AKO) possesses potent bioactivities but has limited applications in the food industry due to its poor stability, strong off-flavor, and low bioavailability of contained astaxanthin. In this study, Antarctic krill protein isolate (AKPI) was separated from processing by-product of krill and utilized as a novel wall material via ...

Krill Oil Supplementation and Cognitive Function

2015
Higher dietary intake of the long-chain n-3 polyunsaturated fatty acids (PUFAs), eicosahexaenoic acid (EPA), and docosahexaenoic acid (DHA) is linked to better brain health. While DHA is enriched in synaptic membranes and can change its fluidity, as well as neurotransmitter and receptor densities, EPA acts as a precursor of eicosanoids.
