La intolerancia a la lactosa es un problema común que limita el consumo de productos lácteos. Este estudio evalúa la aplicación de dos enzimas lactasas, una fúngica (Kluyveromices lactis) y otra bacteriana (Bifidobacterium bifidum), para hidrolizar la lactosa en leche de cabra y desarrollar un manjar deslactosado.
