Factors Controlling Histamine Production in Swiss Cheese Inoculated with Lactobacillus buchneri
Swiss cheese was made from raw milk inoculated with various concentrations of a histamine-producing strain of Lactobacillus buchneri. Histamine production in these cheeses was proportional to the initial number of L. buchneri present in the raw milk. The highest inoculum level tested was 10(5) L. buchneri/ml.

Alfalfa‐based silage pellets (ABSP) showed significant results regarding production performance, yolk colour and ω‐3 (PUFAs), as well as the ratio ω‐6/ω‐3 (p < 0.05). The ABSP group also exhibited a higher abundance of beneficial bacteria and a lower abundance of pathogenic bacteria compared to the control group (p < 0.05).
