Structure of a new dimeric acetaldehyde malvidin 3-glucoside condensation product

A new pigment was detected in wine-like model solution containing malvidin 3-O-glucoside and acetaldehyde. This compound was isolated, and its structure was investigated by UV, MS and NMR spectroscopies. The analytical data allowed identification of it to 8,8 methyl methine-linked malvidin 3-O-glucoside dimer.

Acylated malvidin 3-glucoside was isolated from the purple flowers of Impatiens textori Miq. as a major anthocyanin component along with malvidin 3-(6''-malonyl-glucoside). Anthocyanone A:  A Quinone Methide Derivative Resulting from Malvidin 3-O-Glucoside Degradation

A new compound resulting from the oxidative degradation of maldivin 3-O-glucoside under acid conditions was detected in a wine model solution stored under 90 and 25 degrees C. It was isolated by semipreparative HPLC, and its structure was elucidated by UV-vis spectra, mass spectrometry (LC/MS), and NMR spectroscopy (1-D and 2-D).
