Influence of Cocoa Liquor Origin on Cocoa Butter Composition and Color, Texture, and Rheological Properties of Milk and Dark Chocolates: A Preliminary Study

This study compared cocoa liquors from Ecuador, Ghana, and Côte d'Ivoire and evaluated their effects on the color, textural, and rheological properties of milk and dark chocolates. The results showed that cocoa origin influenced cocoa liquor characteristics and contributed to differences in chocolate quality.

Rab8a‐dependent tethering of lipid droplets to mitochondria sustains fatty acid oxidation and cardiomyocyte metabolic flexibility under normoxia. Chemical Profiling and In Vitro Assessment of Antioxidant and Antimicrobial Properties of Algerian Erica arborea L. Extracts, Strengthened by Molecular Modeling Analysis

Erica arborea L. from Algeria was valorized via chemical profiling and bioactivity assessment. The EtOAc extract showed the highest levels of polyphenols, flavonoids, and flavonols. It exhibited strong antioxidant (ABTS•+, DPPH•, FRAP) and antibacterial activity (S. aureus, B. subtilis).
