Effects of Phenolic Acid Impregnation on the Formation of Advanced Glycation End Products and Heterocyclic Aromatic Amines in Roasted Peanuts [PDF]

open access: yesShipin Kexue, 2023
In order to inhibit the formation of advanced glycation end products (AGEs) and heterocyclic aromatic amines (HAAs) in roasted peanuts, six phenolic acids (caffeic acid, ferulic acid, 4-coumaric acid, vanillic acid, gallic acid and chlorogenic acid) were

Trait Anxiety, Coping with Stress, and Norharman

open access: yesPsychological Reports, 1997
Plasma levels of the β-carboline norharman, concentration of platelet 5-HT, trait measures of anxiety, and measures of coping and defense mechanisms were compared for 15 patients with panic disorder and 24 healthy volunteers. Patients indicated that they made less use of the defense mechanism of principalization than control subjects.

不同产地芝麻所制芝麻油中杂环胺的分析测定Determination and analysis of heterocyclic aromatic amines in sesame oil extracted from sesame of different producing areas

open access: yesZhongguo youzhi, 2023

Molecular Mechanisms of Coffee on Prostate Cancer Prevention

open access: yesBioMed Research International, Volume 2022, Issue 1, 2022., 2022
Prostate cancer (PCa) is one of the most common types of cancer among men, and coffee is associated with a reduced risk of developing PCa. Therefore, we aim to review possible coffee molecular mechanisms that contribute to PCa prevention. Coffee has an important antioxidant capacity that reduces oxidative stress, leading to a reduced mutation in cells.

Harman and norharman, metabolites of the entomopathogenic fungus Conidiobolus coronatus (Entomophthorales), affect the serotonin levels and phagocytic activity of hemocytes, insect immunocompetent cells, in Galleria mellonella (Lepidoptera)

open access: yesCell & Bioscience, 2019
Background Although the β-carboline alkaloids harman and norharman are considered as plant metabolites, they can also be secreted by fungi such as the entomopathogen Conidiobolus coronatus. Norharman and harman are also known to be reversible competitive

Effect of different wood species on heterocyclic aromatic amine level in Harbin red sausages

open access: yesFood Science of Animal Products, 2023
The influence of different wood species (in the form of wood chips) on the formation of heterocyclic aromatic amines (HAAs) in smoked Harbin red sausages was investigated. Four common species of wood (pear, oak, apple, beech) were used for smoking.

Effect of different types of sugars in a marinating formulation on the formation of heterocyclic amines in grilled chicken [PDF]

open access: yes, 2014
The aim of the study was to determine the effect of different types of sugar on the formation of heterocyclic amines (HCA) in marinated grilled chicken. Chicken breast samples were marinated with table sugar, brown sugar, and honey for 24 h at 4 °C.

Nicotinamide N-methyltransferase catalyses the N-methylation of the endogenous ß-carboline norharman: evidence for a novel detoxification pathway [PDF]

open access: yes, 2016
Nicotinamide N-methyltransferase (NNMT) is responsible for the N-methylation of nicotinamide to 1-methylnicotinamide. Our recent studies have demonstrated that NNMT regulates cellular processes fundamental to the correct functioning and survival of the ...

Higher blood harmane (1-methyl-9H-pyrido[3,4-b]indole) concentrations correlate with lower olfactory scores in essential tremor [PDF]

open access: yes, 2008
Harmane (1-methyl-9H-pyrido[3,4-b]indole), a neurotoxin, may be an environmental risk factor for essential tremor (ET). Harmane and related chemicals are toxic to the cerebellum.
