Effects of Direct Steam Injection and Spray‐Drying on the Physicochemical, Nutritional, and Functional Properties of Black Bean Protein Concentrates

open access: yesSustainable Food Proteins, Volume 4, Issue 3, September 2026.
Effects of direct steam injection and spray‐drying on the physicochemical, nutritional, and functional properties of black bean protein concentrates. ABSTRACT Direct steam injection (DSI) and spray‐drying are key unit operations in the industrial production of pulse protein ingredients that are often overlooked in laboratory‐scale studies.

Cause and Prevention of Rancidity in Palm Nut Kernel Cake [PDF]

open access: yesThe Journal of Agricultural Science, 1916
One of the most common complaints of users of palm nut kernel cake is that it is liable to become rancid on keeping. Rancidity developing in an oil-seed residue like palm nut kernel cake is likely to be due to splitting of the fats of the cake by a fat-splitting ferment or enzyme— a lipase—formed under certain conditions.

Dynamic Adsorption of Water Vapour by Palm Kernel Cake

open access: yesInternational Journal of Food Properties, 2013
Dynamic water vapour adsorption isotherms by palm kernel cake in a packed bed column were determined at different relative humidity of air (20–95 ± 2%), superficial air velocity (0.05–0.15 m/s), constant ambient temperature (30 ± 1°C), and bed height, and with dried palm kernel cake of different particle sizes (0.86–5.15 mm).

Aquafaba (Chickpea Cooking Water) as a Natural Emulsifier in the Development of Plant‐Based Coffee Whitener

open access: yesJournal of the American Oil Chemists' Society, Volume 103, Issue 7, Page 729-739, July 2026.
ABSTRACT In this study, the possibility of using aquafaba powder, derived from chickpea cooking water, as a natural emulsifier in the formulation of plant‐based coffee whitener was evaluated. For this purpose, coffee whiteners, which are emulsion type products, are obtained by high‐shear mixing followed by high‐pressure homogenization of the aqueous ...

Valorization of Palm Kernel Cake as Bioadhesive for Particle Board

open access: yesIOP Conference Series: Earth and Environmental Science, 2018
The palm oil industry is one of the strategic industries in Indonesia. the annual increasing of oil palm production provides negative impact on the environment. This is related to waste of production. There are two types of waste production of crude palm oil, namely solid waste and liquid waste. Palm kernel cake (PKC) is an example of solid waste.
