El trabajo final de maestría contempló la extracción y caracterización de pectina a partir de epicarpio y mesocarpio de badea (Passiflora quadrangularis) en tres estados de maduración verde, pintón y maduro, para determinar su viabilidad de obtención, calidad, características y comportamiento.
