Glycosides changed the stability and antioxidant activity of pelargonidin

open access: yesLWT - Food Science and Technology, 2021
Abstract Pelargonidin glucosides represent important pigments in the food industry. We compared the pH, metal-ionic, and thermal stability of pelargonidin (Pg), pelargonidin-3-O-glucoside (P3G), pelargonidin-3-O-rutinoside (P3R), and pelargonidin-3,5-O-diglucoside (P35DG) using visible spectrum analysis at 400–700 nm.

Antioxidant activity of delphinidin and pelargonidin: Theory and practice

Journal of Food Biochemistry, 2022
The quantum chemical density functional theory and in vitro chemical-based antioxidant assays were used to research the reaction mechanism of delphinidin/pelargonidin with free radicals including superoxide anion radicals (O2 - ∙) and hydroperoxide radicals (OOH∙). The geometric configuration, bond dissociation energy, PCM (polarizable continuum model)

Functional identification of anthocyanin glucosyltransferase genes: a Ps3GT catalyzes pelargonidin to pelargonidin 3-O-glucoside painting the vivid red flower color of Paeonia

Planta, 2023
Glycosylation from an anthocyanidin 3-O-glucosyltransferase Ps3GT (PsUGT78A27) facilitates the accumulation of pelargonidin 3-O-glucoside, which defines the vivid red flower color and occurs only in specific peony tree cultivars. Although tree peony cultivars of Chinese and Japanese both originated from China, vivid red color is only found in flowers ...

A Density Functional Theory Study on Pelargonidin

The Journal of Physical Chemistry A, 2007
A complete conformational analysis on the isolated and polarizable continuum model (PCM) modeled aqueous solution cation, quinonoidal, and anion forms of pelargonidin, comprising the diverse tautomers of the latter forms, was carried out at the B3LYP/6-31++G(d,p) level.

Antithrombotic and antiplatelet activities of pelargonidin in vivo and in vitro

Archives of Pharmacal Research, 2016
Pelargonidin is a well-known red pigment found in plants, and has been reported as having important biological activities that are potentially beneficial for human health. However, the possible roles of pelargonidin as an anticoagulant and the underlying mechanism have not yet been elucidated.

Pelargonidin 3-acetylglucoside inVerbena flowers

Phytochemistry, 1991
Abstract In the magenta flowers ofVerbena cv ‘Sangria’ a novel acylated anthocyanin was found and determined to be pelargonidin 3-O-(6-O-(acetyl)-β- d -glucopyranoside) by chromatographic and spectral methods. Two known acylated anthocyanins were also isolated from this plant as major pigments, and identified as cyanidin and pelargonidin 3-(6 ...

Acylated pelargonidin 3-sambubioside-5-glucosides in Matthiola incana

Phytochemistry, 1996
Ten acylated pelargonidin 3-sambubioside-5-glucosides were isolated from the red-purple flowers of Matthiola incana, and also pelargonidin 3-glucoside was isolated from the brownish-red flowers of this plant. FAB mass measurements of 10 acylated anthocyanins gave their molecular ions [M]+ at 903-1195 m/z, which were based on acylated pelargonidin 3 ...

Acylated pelargonidin glycosides from a red potato

Phytochemistry, 1998
Abstract Two acylated pelargonidin glycosides were isolated from red tubers of a anthocyanin-rich tetraploid potato which was successfully selected from hybrid seedlings between cultivars of Solanum tuberosum and S. andigena . The major pigment was identified as pelargonidin 3-O-[(4″-O-(trans-p- coumaroyl )-α- l -6″-rhamnopyranosyl -β- d -
