Antioxidant activities of two novel synthetic methylbenzenediol derivatives
2-(tert-Butyl)-5-methylbenzene-1,4-diol and 3-(tert-butyl)-5-methylbenzene-1,2-diol were synthesised by Friedel-Craft reaction of 2-methylbenzene-1,4-diol and 4-methylbenzene-1,2-diol, respectively, with tertiary butanol providing reasonable yields.

Microencapsulation with Maillard Reaction Products to improve the oxidative stability of chia oil [PDF]
The oil obtained from the seeds of chia (Salvia hispanica L.) is a valuable plant source of omega-3 polyunsaturated fatty acids (PUFA). Chia oil’s high PUFA content makes it an interesting source for enriching foods with these essential fatty acids, but ...

Relationship structure-antioxidant activity of hindered phenolic compounds
The relationship between the structure and the antioxidant activity of 21 hindered phenolic compounds was investigated by Rancimat and DPPH· tests. 3-tert-butyl-5-methylbenzene-1,2-diol is the strongest antioxidant in the Rancimat test but not in the ...

Inhibition of hydroperoxy-, keto- and hydroxy-FAME by alpha- and delta-tocopherol at Rancimat conditions [PDF]
The effects of alpha- and delta-tocopherol on inhibition of hydroperoxides, keto and hydroxy compounds at Rancimat conditions, i.e. 100 ºC and air bubbling, were studied in samples of fatty acid methyl esters (FAME) obtained from high linoleic (HL) and ...

Evaluation of a numerical method to predict the polyphenol content in monovarietal olive oils [PDF]
Three monovarietal virgin olive oils obtained from olives grown under biological agricultural system, in Portugal, with different ripening stages, were studied in what concerns the parameters usually related with oxidation status (total polyphenols ...
