How Salmonella Works Under Osmotic and Desiccation Stresses
ABSTRACT Salmonella remains one of the leading threats in foods with reduced water activity, where it can survive for long periods and cause outbreaks. Its persistence stems from a wide array of adaptive strategies shaped by the selective pressures imposed by low‐moisture foods.

ABSTRACT Introduction Livestock markets are critical hubs within animal trade networks that influence pathogen dissemination at the regional and national scale. Indeed, a 2016 Salmonella serovar Heidelberg outbreak, initially linked to surplus dairy calves at livestock markets, sickened 63 people across 17 states.

Invasive salmonellosis in Malawi
The incidence of invasive salmonellosis has increased among children and HIV-infected adults in Malawi. This has been associated with the emergence of drug resistance in the non-typhoidal Salmonella serovars Enteritidis and Typhimurium.

This study evaluates toasting, mixing, molding, and cooling on Salmonella survival in granola bars. The data generated will help optimize the chewy chocolate chip granola bar manufacturing process. Toasting old‐fashioned (rolled) oats at 162.7°C (325°F) for 12 min was found to be effective in reducing the Salmonella population by 6.04 ± 0.22 log CFU/g.

Bacterial Extracellular Vesicles in Biomedical Research and Clinical Translation
Bacterial membrane vesicle biomedical applications. ABSTRACT Bacterial Extracellular Vesicles (bEVs) are lipid (single‐ or double‐bilayer) nanostructures secreted by virtually all bacteria that play fundamental roles in intercellular communication and have emerged as powerful, multifunctional tools in biomedicine. Their intrinsic ability to encapsulate
