大豆油は, 大豆食品中ではもっともアレルゲン性が高い食品にリストアップされている。しかし, 食用大豆油の総タンパク質含量は理論的にも, 状況証拠的にもアレルギー反応を引き起こす閾値よりずっと低い。この不一致の背景について考察した。その結果, 原因として考えられる, (1)反応を引き起こす量のアレルゲンが残存している, (2) 反応を促進する量の脂質過酸化物が混在する, (3) 多く含まれるリノール酸が関与する, のいずれの点からも, 大豆油をもっとも危険な大豆食品にランク付ける科学的根拠は見出されなかった。おそらく, 食用油脂精製技術が未熟な時代の情報が, 無条件に引用されてきたためであろうと推測された。大豆油に反応する敏感な大豆アレルギー患者は皆無ではないが, そのような特例を除けば ...
