Neuroprotective Effects of Ethiopian Coffee Beans against Hyperglycemia‐induced Brain Injury in Rats

open access: yesFood Science &Nutrition, Volume 14, Issue 7, July 2026.
Ethiopian coffee bean extracts, particularly the cold aqueous preparation, demonstrated significant neuroprotective effects against hyperglycemia‐induced oxidative brain injury in an ex vivo rat brain tissue model. The extracts mitigated oxidative stress by restoring antioxidant defenses (GSH, SOD, CAT) and reducing lipid peroxidation (MDA) and ...

Liquid Chromatography−Mass Spectrometry (LC-MS) Investigation of the Thiobarbituric Acid Reactive Substances (TBARS) Reaction

open access: yes, 2016
The thiobarbituric acid reactive substances (TBARS) assay is a commonly used method for the detection of lipid peroxidation. Malondialdehyde is formed as a result of lipid peroxidation and reacts with thiobarbituric acid to form a pink pigment that has ...

Effect of Seaweed Fucoidan Incorporated Into Batter on Shelf Life Extension of Silver Carp (Hypophthalmichthys molitrix) Nugget During Refrigerated Storage

open access: yesFood Science &Nutrition, Volume 14, Issue 7, July 2026.
The fucoidan from Sargassum angustifolium incorporated directly in batter (0%, 1%, 2%, and 3% w/w; C, F1, F2, and F3, respectively) of silver carp (Hypophthalmichthys molitrix) nuggets increased some physiochemical properties during the refrigerated storage.

Lipidoxidation i nötkött under olika lagringsbetingelser : mätningar med statisk head-space gaskromatografi och 2-tiobarbitursyrareaktiv substans (TBARS) [PDF]

open access: yes, 2013
This thesis assesses and compares lipid oxidation in beef samples from different ageing approaches by using static headspace gas chromatographic method and 2-thiobarbituric acid reactive substances.

Recovery of Phenolic Compounds From Elsholtzia ciliata Leaves by Ultrasound‐Assisted Extraction and Their Antioxidant Application in Food

open access: yesFood Science &Nutrition, Volume 14, Issue 7, July 2026.
Ultrasound‐assisted extraction, optimized by response surface methodology, efficiently recovered antioxidant phenolics from Elsholtzia ciliata leaves at 77°C for 67 min with 3.6 min of sonication, using 60% ethanol, pH 5.5, and a 1:18 material‐to‐solvent ratio. The optimized extract contained 28.45 ± 0.50 mg GAE/g DW total phenolic content and 6.07 ± 0.

Effect of early postnatal chronic GA, NAC and LPS administration on TBARS content.

open access: yes, 2013
NAC prevented the increase of TBARS content induced by GA and LPS. *P < 0.01 compared with saline treated group and #P< 0.05 compared with respective control group (Duncan’s multiple comparisons test). Data are presented as means ± S.E.M.

Genetic Variants in Antioxidant Genes Modulate the Relationships Among Obesity-Related Oxidative Stress Markers in Mexican Children

open access: yesAntioxidants
Single-nucleotide polymorphisms (SNPs) in antioxidant genes could influence redox regulation from early life. We aimed to assess the direct and modulatory effects of SNPs in antioxidant genes (SOD2 rs4880, GPX1 rs1050450, GPX7 rs835337, CAT rs1001179) on
