Expression and Isolation of Limonoid UDP-glucosyltransferase, a Bitterness-reducing Enzyme, in E.coli

Limonoids are abundant as bitter taste in citrus fruit and other plants. Interestingly. limonoid UDP-glucosyltransferase (LUGT) effectively ameliorates the bitterness from limonoid. The high level of LUGT expression in Escherichia coli can result in the formation of insoluble aggregates known as inclusion bodies.
