Food Waste to Wellness: A Grape Pomace Blend in Gastric Cancer Prevention

Grape pomace was used to set up a phytocomplex studied for gastric cancer prevention. HPLC/MS analyses revealed that this mixture is a source of many polyphenols and amino acids. This novel nutraceutical (GPE) selectively targets cancer cells, sparing healthy ones. Molecular mechanisms confirmed that GPE acts, inducing apoptosis and autophagy.

Early Oxidation Detection in White Wine by Electronic Tongue: A Preliminary Study

Beginning at week 8 of storage, the e‐tongue discrimination indices (DI) between control and treated wine (sealed wine stored alongside partially opened wine bottles) were high (DI > 80%) and remained high throughout the study, indicating that the e‐tongue distinguished between control and treated samples.

Alcohol reduction methods in red wines impact phenolic compositions and sensory attributes. Osmotic distillation shows promise in preserving phenolic compounds during dealcoholizing. Mechanical and blending methods can compensate for phenolic loss in dealcoholized wines.
