Microbial and enzymatic battle with food contaminant zearalenone (ZEN)
Applied Microbiology and Biotechnology, 2022Zearalenone (ZEN) contamination of various foods and feeds is an important global problem. In some animals and humans, ZEN causes significant health issues in addition to massive economic losses, annually. Therefore, removal or degradation of the ZEN in foods and feeds is required to be done.

An increasing number of Bacillus strains have been identified, and the removal capacity of zearalenone (ZEN) was determined; however, they failed to reveal the detoxification mechanism and transformation product. Here, Bacillus subtilis Y816, which could transform 40 mg/L of ZEN within 7 h of fermentation, was identified and studied.

Zearalenone (ZEN) detection by a single chain fragment variable (scFv) antibody
World Journal of Microbiology and Biotechnology, 2008Zearalenone (ZEN) is a mycotoxin produced by members of the genus Fusarium. ZEN detection by ELISA using single chain fragment variable (scFv) represents a novel means of mycotoxin detection and diagnosis of fungal infection. To develop immunoassay of ZEN based on scFv, ZEN was conjugated to horseradish peroxidase (HRP).

The mycotoxin zearalenone, also known as F-2 mycotoxin or RAL is a potent estrogenic metabolite produced by some Gibberella and Fusarium species. It is a common contaminant of cereal crops, livestock and poultry products. However, detoxification of zearalenone (ZEN) remains a challenge.

Although several studies have reported co-occurrence of mycotoxins in fish feed limited information is available on the physiological effects. In the current study, the single and combined effect of added dietary AFB1 and ZEN in various concentrations for 60 days was tested in rainbow trout on growth parameters, mortality, intestinal digestive enzymes ...

A long-term feeding experiment with dairy cows was performed to investigate the effects of feeding a Fusarium toxin contaminated (FUS) and a background-contaminated control (CON) ration with a mean concentrate feed proportion of 50% during the first 11 weeks after parturition (Groups FUS-50, CON-50, Period 1), and with concentrate feed proportions of ...

Wheat bran is an important source for human and animal feed. Its nutritional aspects include a high content of fibre and minerals, as well as phenolic compounds that help prevent chronic diseases. However, wheat can be susceptible to contamination by fungus, which can produce mycotoxins such as deoxynivalenol (DON) and zearalenone (ZEN), causing ...
