Purification of an Aminopeptidase Preferentially Releasing N-terminal Alanine from Cucumber Leaves and Its Identification as a Plant Aminopeptidase N [PDF]
In this study, a highly active foliar aminopeptidase preferentially releasing N-terminal alanine from artificial substrates was purified and characterized from cucumber (Cucumis sativus L. suyo). The enzyme had a molecular mass of 200 kDa consisting of two subunits of 95 kDa. It was a metalloprotease the pH optimum of which was 8 to 9. It cleaved Ala-,

Variable O-glycosylation of CD13 (aminopeptidase N)
The monoclonal antibody AG6 was raised against HUVE cells and was confirmed as recognizing CD13 (aminopeptidase N) by its reactivity with the CD13 cDNA transfectant pipz "4". However, in sequential immunoprecipitation studies with another anti-CD13 monoclonal, WM15, neither was able to completely remove the molecules recognized by the other.

Untargeted peptide profiling investigates how S. thermophilus, Lb. bulgaricus, and endogenous milk enzymes impact proteolysis during early‐stage milk fermentation. ≥ 3000 identified peptides show the strongest influence of LB on the peptide profile and number of bioactive peptides. Shorter peptides are mostly formed by LB and hydrolyzed by ST.
