Polyelectrolytic character of amylose. I.

Journal of Polymer Science Part A-1: Polymer Chemistry, 1966
AbstractElectrophoresis and titration experiments on amylose solutions and gels are described. The experimental results clearly demonstrate the negative charge of the amylose molecules at pH values of 11 and higher. With the assumption that a monomer unit can carry one charge only, pK's of amylose are calculated.

The crystallinity of amylose and amylopectin films

Carbohydrate Polymers, 2002
X-ray crystallinity of amylose and amylopectin films with 0, 10 and 30% of glycerol and stored at RH 0, 54 and 91% were studied. Films prepared of water cast dilute solutions and dried at 70°C were thin and transparent. Each fresh amylose film showed B-type crystalline structures, and depending on the glycerol and water contents the amount of ...

Random substitution of amylose

Carbohydrate Research, 1980
Abstract The production of modified amyloses often involves the p-toluenesulfonylation of the primary hydroxyl group of the d -glucopyranosyl residues, but it was not known whether this esterification is random when ∼20% of the d -glucopyranosyl residues have been substituted.

Extrusion of Rice, Bean and Corn Starches: Extrudate Structure and Molecular Changes in Amylose and Amylopectin.

Journal of Food Science, 2016
The objective of this study was to evaluate the effects of starch source and amylose content on the expansion ratio, density, and texture of expanded extrudates, as well as to investigate the structural and molecular changes that occur in starch granules

Enzymatic synthesis of functional amylosic materials and amylose analog polysaccharides

2019
Because polysaccharides have very complicated chemical structures constructed by a great diversity of monosaccharide residues and glycosidic linkages, enzymatic approaches have been identified as powerful tools to precisely synthesize polysaccharides as the reactions progress in highly controlled regio- and stereoarrangements.
